Here there are many different kinds of chile, but none is as steeped in tradition, as flavorful, lively and rich as Chimayo Chile. Many of the different varieties from different areas of New Mexico were what native people were growing when the explorers arrived. Over time, the plants have adapted to the soil, the wind and sun in the Chimayo area producing this exemplar chile.
